About Fuqi Feipian
Fuqi Feipian (Couple's Sliced Lung) is a famous Sichuan cold dish made of thinly sliced beef, beef lung, and tripe in a spicy sauce. Despite the name, it does not actually contain lung in modern versions. The name comes from the couple who created it in the 1930s.
History & Background
Created in the 1930s by a couple in Chengdu. The name literally means 'married couple's lung slices' but modern versions use beef instead of lung.
Key Ingredients
The Honest Review
No fluff. No hype. What you actually need to know.
“The name sounds scary but it is actually just sliced beef and tripe in chili oil. It is tasty but not mind-blowing. The texture of tripe can be weird for some - it is chewy and slightly rubbery. It is a good appetizer to share, but I would not make a special trip for it. Many foreigners find it pleasant but forgettable.”
Tips for Foreigners
- Modern versions usually do not contain actual lung - do not worry
- The tripe texture is chewy - if you do not like chewy textures, skip it
- It is served cold or at room temperature - do not expect it hot
- Good as a shared appetizer, not really a main dish
What to Actually Expect
- Thinly sliced meat in a pool of red chili oil
- A cold dish - served at room temperature or chilled
- Chewy textures from tripe and tendon
- A numbing, spicy flavor that builds as you eat
What to Avoid
- Do not order if you are squeamish about offal textures
- Do not expect it to be hot - it is a cold dish
- Do not make it your only dish - it is meant to be shared
- Do not be scared by the name - it is mostly just beef slices
